The food system in Copenhagen is evolving towards greater inclusion and diversity – both in terms of actors, products and connections. The Greater Copenhagen Lab (GCPH Lab) consists of the University of Copenhagen, Lejre Municipality and the SMEs Circular Food Technology / Agrain and Changing Food. 

 

The GCPH Lab will strengthen the regional food system by creating awareness, recognition and learning about food system transition based on selected innovation actions. The selected innovation themes are distinguished by the fact that they 1) could be further matured and upscaled and 2) are key elements in a sustainable transformation of the food system. We encourage all food system stakeholders to collaborate with us on these themes.

Through the development of events, tool kits and resources in collaboration with research partners, the FoodSHIFT Accelerator Labs will share their approaches and inspire us all to join a food systems shift.
